
I went out to dinner the other day with my husband. We went to one of our favorite restaurants, Rustico. I think my husband was jealous that I had Carrot Hummus the other day, (see below) So after our yummy appetizer, the waiter asked us “what would you like for your main meal?” My husband said, I will have the burger. No denying that the burgers are delicious at Rustico with toasted brioche buns. It had hit a record 100 degrees and I was not in the mood to really eat anything heavy. I said, “I’ll have the zucchini capriccio.” My husband looked at me, “is that going to be enough for you for dinner?” It was perfect! The thinly sliced zucchini and summer squash topped with basil puree and balsamic vinaigrette ands season with sea salt and pepper. Finished with a bunch of micro greens, roasted cherry tomatoes and shaved parmesan. I got to figure out how to make this at home! Yum!
